I Love Guacamole!

So today for dinner we were “scheduled” to have leftovers.  I don’t know about you but I HATE leftovers.  I would much rather throw them away and serve something fresh, but that’s extremely wasteful.  What I like to do when we need to eat leftovers is make something I LOVE to go with it – and mask the not-so-fun part of eating leftovers, so I made guacamole!  Guacamole and chips can make any meal amazing!

On a separate note, I just discovered that people in Texas don’t eat pork and sour kraut for New Years.  Instead they eat black eyed peas.  Regional foods are interesting!

  1. My husband suggested that I leave my recipe for guacamole, so here goes!

    1/2 red onion chopped finely
    2 ripe avocados mashed (I use a potato masher)
    juice from 1 lime (fresh is best)
    Salt & Pepper to taste
    1 small jalapeno chopped finely (optional)
    handful of cilantro chopped

    Just mix it all together and enjoy!!
